We are committed to staying small-scale to maintain quality. Our sausage is sold only at our Farm Store in Bakersfield, the Burlington Farmers’ Market and at our pickup sites (see shop).
We do not buy meat from other farms and do the utmost to ensure the comfort and vitality of our animals.
Otto von Bismarck said, “Laws are like sausages, it is better not to see them being made.” Not so with our sausage. We take the utmost care to remove all the connective tissue (gristle) and cartilage from the meat and use only the finest cuts (shoulders, hams, and even loins) in combination with the “trim”.
